I tried a Pinterest Recipe...


Tonight I tried out a recipe I found on Pinterest for the kids, through Mama Knows Gluten Free. There have been so many good things we’ve made over these past (nearly) 3 years of all-thing-allergen-free-journey. I’m still learning, regularly!! This, pictured and still cooking, is her Gluten Free Double Chocolate Muffins. With our kiddo, he is now a gluten/wheat, egg, soy, and dairy free eater due to his medical condition called EOE (Eosinophilic Esophagitis,) and another called FPIES (Food-Protein Induced Enterocolitis Syndrome.) With that, I substituted the dairy with coconut milk, the eggs with applesauce, and the butter with the Earth Balance Soy-Free Buttery Spread we normally use.

In spite of the scary health circumstances for our Tyler, I am grateful for the things we have learned. Outside of the “clean eating” aspect, I have learned you can make those yummy things you’ve always had, IF you are willing to allow the time (anything baked typically takes longer), plus some trial-and-error until you get it, “just right.” It is definitely more expensive that the cheap junk you get through a drive-thru, but obviously that’s better anyway, right?

We aren’t above-it-all. We definitely miss things we once had. My husband Will and I, along with his younger brother Luke, can technically cheat off this way-of-eating. Tyler can’t. I try to still with him, but it is hard sometimes, I’m not gonna lie. Really difficult! I’m getting better at it. I love cooking from scratch, and I love being able to make things that “almost” taste like the real thing (with no gluten, eggs, soy, or dairy in them). Those are considered treats anyhow, so those are especially fun to make. When I do hear, “this almost tastes like the real thing,” I know I’ve done good. The bottom line is - as long as my family likes it, that’s all that matters! ❤️

My family is my WHY. Doing something good for the “big picture" in life it is more than just intrinsic value. We are designed to give and to receive, and it should come joyfully from the heart. It is humbling and empowering to know that Joy wrapped up in one little package can be so motivating. With that being said, doing good should be evident for yourself as well as those you work along side at work, at church, at home, or any given relationship.  Life is short - tell others what they mean or risk them resolving to their own ideas of what they mean to you. It's in our nature. Giving praise where praise is due is fundamental in knowing how we have done, and that we are valued. It shapes our experiences. Without it we will always flounder about and come to our own conclusions, no matter how ridiculous they may be.  Doing something good for others extends past your reflective talking points, pushes you past your routine, and is something each of us crave as humans.   It's been a while! I am starting my blog again, because it's 2023, and we have SURVIVED and will continue to SURVIVE from the last few years on this wild ride of a world we live in.
